During September Gary Rhodes visited The Calabash Hotel and Villas to view first hand the new kitchen that has been installed in preparation for the official opening of ‘rhodes restaurant’ scheduled for January 2004.
Gary and Wayne Tapsfield, his close colleague and talented chef, were delighted with the kitchen and found it to be a tremendous working environment for them and the whole kitchen brigade. It also proved to be a very fertile ground for the preparation of the new dishes that Gary has prepared and designed especially for Calabash. Over the period that Gary, Wayne and David Marshall, Gary’s resident chef at Calabash, worked together in Grenada they perfected the new menu and gave training sessions to the Food & Beverage staff.
When leaving Grenada Gary stated that he was more than happy with the menu compilation and that the dishes produced were very exciting. Gary specifically designed the whole menu to use local Grenadian produce and flavours giving diners a true taste of Grenada with a touch of Rhodes.
