Specialties include lime soup and poc chuc (Yucatecan pork marinated in a sour-orange sauce with pickled onions), papadzules (tortillas piled with hard-boiled eggs and drenched in a pumpkin-seed sauce), and pollo pibíl (chicken baked in banana leaves).
