Mexico City natives Jose Gonzalez and Albert Garza made their mark a number of years ago in Cozumel when they opened the popular Azul Cobalto Italian restaurant. Last year they not only changed their location and name, but also became one of the few island restaurants to offer authentic Mexican haute cuisine. As the restaurant’s name “Mexico Through the Centuries” indicates, this open-air eatery offers traditional recipes from throughout the Mexican Republic, ranging from lighter fares like soups, panuchos and sopes, to fine steaks and seafood. All of their dishes are served with the owners’ unique flare for gourmet presentation.
