Mario's Bistro is located in the village of Sandy Ground in St Martin. It sits on the Marigot channel overlooking the water and its wildlife when the wheather and water permit it.

The restaurant was opened in the spring of 1995 and quickly became very popular with the local crowd and tourists from around the world. Its hallmarks are Mario's cooking, the informal yet elegant decor, and attentive service.

Mario trained in Québec City and became one of the youngest chefs to take a gourmet kitchen in his hands at Le Marie Clarisse. He then came to St Martin to be successively the chef at Chez Martine, Le Fish Pot and Rainbow, all of them located in Grand Case. At Mario's Bistro, he adapted a concept of cuisine that suits the Caribbean and its cosmopolitan clientèle.

Main courses include grilled tuna with melted blue cheese, sautéed jumbo scallops with crab mashed potatoes, crab crusted baked mahi mahi, penne with shimp flambéed in bourbon, pad thai with shrimp and caramelized duck, bouillabaisse with green Thai curry, grilled chicken breast with baby asparagus, grilled "Angus" rib eye steak, sautéed veal scaloppini, duck honey ginger glazed and roasted crispy with sweet & sour sauce, and a duet of grilled lamb chop and braised lamb shank shepherd pie. 

Reservations are taken by phone or in person only and will not be taken more than one month in advance. Reservations are not taken more than 1 month ahead of time. Reservations are kept for 20 minutes only. Seatings for water tables are at 7 and 9:15 pm for parties of 2 - 5. Seatings for inside tables and larger parties are at 7:30 and 8:00 pm.
