In December, 2006, Blue Shore Grill launched its second restaurant, LOTUS.

Located on the east end of St. Thomas at American Yacht Harbor in Red Hook, customers will surely take notice that the décor and creative cuisine parallel sister pan-Latin eatery HAVANA BLUE.

The mantra is to “step outside the bento box” to enjoy Caribbean Pan Asian Cuisine and Fresh Local Sushi. Young couples share Asian-themed cocktails like Zen-tinis at the river rock adorned bar before sitting down at low, candlelit tables as schools of silver fish swish by on the giant video screen.

The cuisine focuses on fresh ingredients with dishes such as tempting Mini Thai Crab Cakes, Dragon Shrimp Tempura, Black & White Sesame Dusted Salmon, Duck Chi-jitas, Sake Glazed Filet, and Buddha’s Zen Cheesecake. Indulge in LOTUS’ cutting-edge sushi creations with house favorites Pink Lady
(Spicy Blue Crab / Spicy Tuna / jicama / crispy pickled ginger / pink soy paper / entire roll tempura / Malaysian chile sauce / low carb (no rice) / owners’ favorite) or Royale w/ Cheese (Tender Filet Mignon / tomato / manchego cheese / baby greens / soy paper / crispy tobacco onion / Japanese mustard coulis.)

The creative drinks, wine and sake selections complement the innovative cuisine. While HAVANA BLUE is famous for Mojitos, LOTUS is mixing up Sexy Sakejitos. The “Den of Zen” is a separate dining room, which can be rented for private events, with sliding Japanese walls to open or close as needed. Journey into Blue Shore Grill’s multi sensory vision of Asian cuisine combined with waterfront chic visuals, vibes, aromas, and experiential ambiance.

December 2007, Eric and Nicole launched their first casual, island “party bar” called “FatBoys Bar, Grill & Games”. A fun surf’s up atmosphere greets guests as they relax and sip an array of frozen drink concoctions like Painkillas, Bushwhacker, and Mojitos. FatBoys’ has quickly become famous for Mako Shark Bites, Fish Tacos, and their signature fresh ground daily Big Kahuna Burger. FatBoys also features St. Thomas’ one and only “Shark Deck” which overlooks Red Hook with views to St. John. Guests enjoy playing pool, slots, & sipping on one of FatBoys’ infamous happy hour specials.

I also noticed that lotus has changed its menu extensively since last year...opting to become a full service sushi restaurant. I inquired about this and the answer was simple---it's what the market wants. Only serious foodies could appreciate the prior menus...this one is creative but approachable and in my opinion, just as good!!! Will eat there again and again and I applaud the owners for being willing to listen to the guests and change without involving their egos. No wonder Havana Blue and Lotus are the two best restaurants on island.

Phenomenal food, phenomenal service. We came to St. Thomas on our honeymoon and it was hard to eat anywhere else. The concierege at the Ritz recommended it the 1st night we arrived. We ate there 3 times and we were only on the island for 6 days! Very imaginitive sushi, I was impressed with the flavors and presentation of every dish we tried. Very reasonable pricing most of the sushi rolls were $8-$12. My new favorite restaurant!

Had one of the best meals of our life at lotus. Cuisine is unbelievably creative and inventive and the service is very friendly. We went back a second night and the manager recognized us and bought us desserts.

Lotus is family style dining which means dishes come out as they are prepared with the intention of sharing. We learned that if you don't want to share you have to specifically say so and the kitchen will accommodate you....but we like sharing and it made the experience fun!

This is far and away the most creative cuisine in St. Thomas. Great vibe. Cool ambience. Solid service. Pricey? Lotus is a mid priced restaurant for St. Thomas at best. Don't miss dining at Lotus

I can only wish that there was a Lotus where I live. The combinations of taste are outstanding. The chef is very creative. The food is wonderful. Every time we are back in STT we make a dinner reservation here.

The best dining experience of my life. We go to restaurants in NYC and none have compared to the entire experience we had at Lotus. I even got a T-shirt!

The night I visited, the chef had an appetizer feature of monkfish liver sprinkled with sea salt. It was sublime! Creamy and rich, yet the sea salt gave it a punch with a crunch! The atmosphere and service were top notch. One of the highlights of my trip!

By far the most creative cuisine I have tasted in quite some time. What a surprise to find this place in St. Thomas of all places. Service was very competent as well. We will defintely go back!

This is the absolute best Pan Asian place I've ever eaten at. The service is family style and we liked sharing everything at the table. Cuisine is way over the top...some of the best sushi I've had anywhere.

Wow! I was blown away by the romantic ambience at Lotus. We had an amazing dinner with excellent service. Our waitress, Nancy was delightful. Truly magnificent all around!

This was my first sushi experience and I must say it was divine. The food was delicious. The resturant is amazingly decorated and the staff is GREAT. I can not wait to return!

Imaginative, tasty, well prepared & served dishes. I was pleasantly surprised that a restaurant of this calibre would exist in the Caribbean. Can't wait to return!!!
